Ingredients (6 people) :
- 1 onion
- 1 red pepper
- 1 clove of garlic
- 1/4 teaspoon chili powder
- powdered
- 2 bunches of flat-leaf parsley
- 8 eggs
- 20g of butter
- Olive oil
- Salt and pepper
1 - Peel and slice the onion and garlic. Rinse, dry, deseed and slice the pepper.
2 - Sauté the vegetables in a little olive oil with chili powder, salt and pepper. Rinse, dry and chop the parsley.
3 - Break the eggs into a bowl and beat them into an omelet with the parsley, salt, and pepper. In a large frying pan, heat the butter with a little olive oil, add the beaten eggs, then the pepper-onion mixture. Cover the frying pan and cook for 3 to 4 minutes over low heat. When the omelet is cooked, turn it over and cook for another 3 to 4 minutes on the other side.
4 - Present the omelet on a serving dish and enjoy it hot or cold.
5 - Enjoy with a chilled glass of Aria II.
