Ingredients (6 people) :- 400g of fresh anchovies
> For the marinade:
- 1 bunch of flat-leaf parsley
- 1 shallot
- 1 clove of garlic
- 10cl of wine vinegar
- white
- 1 bay leaf
- 10cl of dry white wine
- 20cl of extra virgin olive oil
- 1 pinch of salt
- 1⁄2 teaspoon of peppercorns
1 - Rinse the anchovies and dry them. Remove the fillets with a knife and place them on a plate.
2 - Chop the parsley and set a pinch aside. Peel and mince the shallot and garlic clove. Mix all the ingredients in a bowl and cover the anchovies with the marinade. Leave the mix in the refrigerator for one hour.
3 - Five minutes before serving, remove the anchovies from the refrigerator and sprinkle with the reserved chopped parsley.
4 - Enjoy with a flute of chilled Eterna I.
