An idea for a seafood aperitif: Eterna I and marinated anchovies

Dive into a unique marriage of land and sea with this recipe for marinated anchovies, enhanced by the elegance of Eterna I , our dry, alcohol-free sparkling with sea fennel.

This pairing celebrates subtle, salty flavours, where saline and herbaceous notes delicately complement each other. A refreshing taste experience that evokes a journey to the shores of the Mediterranean!

Ingredients (6 people) :
  • 400g of fresh anchovies
> For the marinade:
  • 1 bunch of flat-leaf parsley
  • 1 shallot
  • 1 clove of garlic
  • 10cl of wine vinegar
  • white
  • 1 bay leaf
  • 10cl of dry white wine
  • 20cl of extra virgin olive oil
  • 1 pinch of salt
  • 1⁄2 teaspoon of peppercorns

1 - Rinse the anchovies and dry them. Remove the fillets with a knife and place them on a plate.


2 - Chop the parsley and set a pinch aside. Peel and mince the shallot and garlic clove. Mix all the ingredients in a bowl and cover the anchovies with the marinade. Leave the mix in the refrigerator for one hour.


3 - Five minutes before serving, remove the anchovies from the refrigerator and sprinkle with the reserved chopped parsley.


4 - Enjoy with a flute of chilled Eterna I.
