An idea for a dessert pairing: Calda and caramel flan

Ingredients (6 people) :

> For the flan
  • 1L of whole milk
  • 4 or 5 coriander seeds
  • 1 vanilla pod
  • 1 orange
  • 200g of sugar for the caramel
  • + 160g of sugar
  • 10 egg yolks
  • 1 can of 410g condensed milk
  • 5cl of orange liqueur
> For the whipped cream
  • 250g of whipping cream
  • 2 tablespoons of icing sugar

1 - Preheat the oven to 150°C.

2 - Bring the milk to a boil with the coriander seeds. Remove from the heat and add the split vanilla pod and the orange zest. Let it steep in the hot milk for 30 minutes.

3 - Make a brown caramel with 200g of sugar by cooking it over low heat without letting it burn. Pour everything into the bottom of a crown-shaped mold.

4 - Separate the egg whites from the yolks and set the yolks aside. Keep the whites for another use (they freeze very well). Scrape the vanilla pod that was in the milk, add the vanilla seeds to the milk and set the pod aside for the whipped cream. Mix the warm milk by whisking it with the condensed milk, 160g of sugar, the egg yolks and the orange liqueur. Pour this mixture into the mold over the already cold caramel.

5 - Bake the flan in a bain-marie in the oven for about 1 hour. The flan should be set but still wobbly. Let it cool to room temperature, then refrigerate for 4 hours.

6 - Prepare the whipped cream: whip the cold whipping cream with the vanilla seeds from the split half pod and the icing sugar. Refrigerate.

7 - To unmold the flan, heat the bottom of the mold to warm the caramel, then turn the flan out onto a serving dish. Serve the flan with a portion of whipped cream.

8 - Enjoy everything with a glass of Calda.
