Working with grapes: a thousand-year-old know-how
Winemakers, whose experience goes back several centuries, are those who have chosen to work with a unique ingredient, grapes, in conjunction with what makes each wine unique: the personality of a terroir, and of the winemaker who strives in his own way to reveal it.
Who are we to tread on the toes of these extraordinary connoisseurs of vines and the earth? Far from imitating or mimicking their work, we preferred to focus on what truly makes us strong: blending, creating bouquets of ingredients that enhance each other.
Recipes composed like a perfume
No grapes or dealcoholized wine base in our bottles, you've probably guessed that. So, how do we obtain the unique aromas in our drinks? And above all, should we expect them to taste similar to wine?
Three-star chef Mauro Colagreco has designed each of our recipes like a perfume: several ingredients with different flavors combine to create a unique aromatic profile.
Often, a flower reveals its volatile aromas to the nose. In the mid-palate, a fruit or plant adds acidity or texture. And finally, in the aftertaste, spices express their warm or bitter notes. Full and complete flavors, unaffected by sometimes very aggressive dealcoholization processes.
Drinks unlike anything else
Since they do not contain grapes, our recipes are nothing like wine: when tasting them, you will be surprised by original aromatics, designed to create pairings while offering you a unique gastronomical experience.
We are convinced that for alcohol-free products to earn their place in the world and become as refined and sophisticated as wine and spirits, they need to offer a wide variety of different flavor profiles. That's why each of our recipes has its own unique character... and the potential to pair with different culinary DNAs!
