The attack opens with fruit. The apple expresses itself with sweetness, almost like a tarte tatin, light and delicious. Then, in the background, iodine appears. Subtle, it creates a mineral and marine sensation. The finish is floral, carried by jasmine, which prolongs the tasting with softness. The whole is soothing, finely balanced, and of great delicacy.

Several varieties of cider apples that bring fruitiness, freshness, as well as a Tatin apple pie-like quality and additional aromatic complexity.

Jasmine white tea

Organic jasmine white tea pearls from a cooperative. Whole tea leaves harvested, then enfleuraged with jasmine flowers and hand-rolled into pearls.

Nori and wakame seaweed

Organic wild seaweed from a Brittany company that hand-harvests seaweed: complex, delicate, and fragrant aroma, slightly woody taste reminiscent of certain teas or dried mushrooms for nori, and briny, close to oyster for wakame.
